Health Fritatta


Nothing super special here, but sometimes it's the simple recipes that we forget to remember. 😘 Jay & I got in our morning workout before the little woke up & THAT is something to celebrate on a Saturday!! 🎉🍾👏🏼 30 MIN led by an expert personal trainer, worked on EVERY MUSLCE GROUP, got our sweat on, & ALL of it from our own living room. 🤗 Seriously, staying healthy had NEVVVEEEER been easier! 👌🏼 Then we had our daily breakfast shake with the little (should snagged a pic of her SWEET chocolate mustache 😂) ... That SHAKE!!! Again, makes it SOOO STINKING EASY to stay HEALTHY!! Less than 2 minutes to make, includes TONS of veggies, tastes like a chocolate DREAM, includes probiotics & minerals, everything to get ourselves off to the BEST start as a family! Just ❤❤❤❤it!! Anyway, getting sidetracked here..... FOCUS, Alyssa!! 🤓 Okay, Soo.... SATURDAYS are full of FAMILY time for us (well, most days are... but ESPECIALLY Saturday's)! Today, we decided to make a Frittata!! Here's the recipe we used, HEAVY on the cilantro. 🤗😂😍👌🏼 DELISH Mexican Frittata 🌶🍃🔥🥑🇲🇽 Ingredients 1/2 tablespoon coconut oil 2 to 3 green onions/scallions, sliced (white and pale green parts only) 1/2 cup chopped bell pepper 🌶 1/4 cup chopped red onion 3 large eggs 🍳 1 tablespoon water 1/4 cup Parmesan cheese 🧀 Salt and freshly ground black pepper 3/4 fresh spinach 1/2 an Avocado 🥑 1/4 cup Greek Yogurt 1 tablespoon chopped fresh cilantro leaves 🍃 Hot sauce to taste 🔥 Directions: Preheat the oven to 425 degrees F. In an 8-inch, nonstick, oven-proof saute pan, heat the oil over medium heat. Add the scallions/green onions, bell peppers, red onion, and cook until soft, about 3 minutes. Meanwhile in a medium bowl, beat the eggs with 1 tablespoon of water. Add Parmesan and season with salt & pepper. Add egg mixture to pan & season with salt and pepper. Cook for about 8 minutes lifting the edges with a spatula, to allow any uncooked egg to flow to the bottom. Sprinkle the top with the spinach. Transfer the pan to the oven and bake until puffed and golden, about 8 to 10 minutes. Top with a dollop of Greek Yogurt, sliced avocado, cilantro (TONS if you're like us... 🤗😂😂😂👌🏼) &&& hot sauce! Serve warm or at room temperature. BON APETITE! 😘 >> PS.
