Vegan (Spicy) Lime Cauliflower Tacos

Made these for dinner tonight and they were sooo good! 😋

Eating healthy does not have to be boring.

Vegan (Spicy) Lime Cauliflower Tacos

Prep Time: 20 min Total: 40 min

-1/4 cup lime juice -1 tablespoon tomato paste (or ketchup) -1 tablespoon apple cider vinegar -1 teaspoon cayenne powder -1/2 teaspoon cumin -pinch of oregano -pinch of garlic powder -pinch of salt -1 tablespoon honey -2 garlic cloves -1/2 teaspoon salt -small head of cauliflower, cut into bite-size pieces (16oz) -1 small red onion, chopped. -1 15oz can black beans, warmed -8 corn tortillas, warmed. -1/2 cup vegan cheese (we use Daiya brand - Jalepeno Havarti Style)

1) Preheat oven to 450. Line larger rimmed baking sheet with foil.

2) Combine lime juice, honey, garlic, salt, tomato paste, apple cider vinegar, cayenne powder, cumin, oregano, garlic powder, garlic gloves (minced). and mix together. Place cauliflower in a large bowl, add the sauce and stir to coat. Transfer to the prepared baking sheet. Sprinkle onion on top.

3) Roast, stirring once, until the cauliflower is tender and browned in spots, 18 to 20 minutes.

4) Serve the vegetables and beans in tortillas, topped with cheese and garnished with your favorites (we used cilantro, jalepeno, and lime).

..And Wallah! Done.

Serves 4 (2 tacos each).
