Fit & Delicious Pad Thai

I've been looking for a recipe for pad thai that doesn't come loaded with carbs & I think I've stumbled upon the perfect alternative! And, I thought it was worth sharing ASAP in case you need something delicious & fit for dinner tonight! Spaghetti Squash Pad Thai! Give this recipe a try & let us know what you think. It was a big hit in our house and something we will definitely be making again!

Spaghetti Squash Pad Thai INGREDIENTS: 2 Spaghetti Squash, cut in half 4 Eggs Cooked Tofu or Other meat Pad Thai Sauce Toppings (Optional): Chopped Green Onion Crushed Peanuts Cilantro Lime Juice Thai Spice or Other Hot Sauce Instructions: 1. Preheat oven to 375. 2. Slice spaghetti squash in half, length wise. Scoop out the seeds and throw away. 3. Place squash halves on baking sheet lined with either parchment paper or olive oil. Make sure the rounded part of the squash is faced up. Bake for 45 minutes. 4. Scoop out the insides and mix in a bowl with pad thai sauce. (Typically I would find a recipe to make my own sauce, but with limited time I just used a jar of pre-made sauce). 5. Then put squash back in the shells and bake for another 7-10 minutes. Then top with whatever you enjoy on your pad thai. *I used green onion, peanuts, cilantro, lime, scrambled eggs, thai spice, and the flakey spice you can get from Thai restaurants. 6.
