Baked Eggs in Avocados

If you are looking for a simple & delish snack or breakfast, look no further!

This thing is chock full of healthy fats & proteins & will keep you full for hours! Ingredients (for 2 servings) 1 Avocado 2 Eggs (Smaller the Better) Dried Basil or Other Herbs Finely Chopped Red Bell Pepper Finely Chopped Chives Salt and Pepper, as desired Preheat your oven to 425 °F. LINE A RIMMED BAKING SHEET WITH TIN FOIL, & USE TWO OTHER 12-18 INCHE PIECES OF FOIL TO CREATE "NESTS" FOR YOUR AVOCADOS BY GENTLY CRUNCHING THE FOIL INTO A BALL. Half your avocado, and remove the pit, & DIG OUT A LITTLE BIT EXTRA WITHOUT REMOVING ALL THE AVOCADO TO MAKE ROOM FOR THE EGG. Place avocados IN "FOIL NESTS" ON baking sheet.

Try to balance the avocado IN THE FOIL so that it doesn’t tilt to its sides, and then crack a preferably small egg in to the hole of the avocado. Do this slowly as to minimize the amount of egg that overflows. Sprinkle with salt, pepper, basil & the bell peppers & chives for a nice presentation. Stick the avocados in to the oven and bake for 15-25 minutes, depending how you like your eggs. I baked mine for 20 minutes, and it was just PERFECT for me, JUST A TAD BIT RUNNY. YUM! Now, it’s all ready to be eaten! I prefer to use a small spoon and scoop it out to eat. ADD HOT SAUCE IF YOU LIKE IT SPICY!! ENJOY!!
